Pumpkin Cookies
- 2½ cups flour
- 1 tsp baking powder
- 1 tsp baking soda
- 2 tsp cinnamon
- ½ tsp nutmeg
- ½ tsp cloves
- ½ tsp salt
- ½ cup butter softened
- 1½ cups sugar
- 1 egg
- 1 cup canned pumpkin
- 1 tsp vanilla
Cream Cheese Frosting
- ½ cup butter softened
- 8 oz cream cheese softened
- 4 cups powdered sugar
- 2 tsp vanilla
To Make Pumpkin Cookies:
Preheat oven to 350℉
Combine flour, baking powder, baking soda, cinnamon, nutmeg, cloves, and salt in a small bowl. Set aside.
Cream ½ cup of butter and sugar. Add pumpkin, egg, and vanilla and beat until creamy.
Mix in dry ingredients until combined.
Drop by tablespoons on a cookie sheet and flatten slightly.
Bake at 350℉ for 15-20 minutes.
To Make Cream Cheese Frosting:
Cream the butter and cream cheese in a bowl.
Add the powdered sugar and vanilla and beat until creamy.
Note: I will often cut the frosting recipe in half unless I am making a double batch of cookie or am using the frosting for something else. This recipe make a lot of frosting!
