Ingredients

Pumpkin Cookies

  • cups flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 2 tsp cinnamon
  • ½ tsp nutmeg
  • ½ tsp cloves
  • ½ tsp salt
  • ½ cup butter softened
  • cups sugar
  • 1 egg
  • 1 cup canned pumpkin
  • 1 tsp vanilla

Cream Cheese Frosting

  • ½ cup butter softened
  • 8 oz cream cheese softened
  • 4 cups powdered sugar
  • 2 tsp vanilla

Instructions

To Make Pumpkin Cookies:

  • Preheat oven to 350℉
  • Combine flour, baking powder, baking soda, cinnamon, nutmeg, cloves, and salt in a small bowl. Set aside.
  • Cream ½ cup of butter and sugar. Add pumpkin, egg, and vanilla and beat until creamy.
  • Mix in dry ingredients until combined.
  • Drop by tablespoons on a cookie sheet and flatten slightly.
  • Bake at 350℉ for 15-20 minutes.

To Make Cream Cheese Frosting:

  • Cream the butter and cream cheese in a bowl.
  • Add the powdered sugar and vanilla and beat until creamy.
  • Note: I will often cut the frosting recipe in half unless I am making a double batch of cookie or am using the frosting for something else. This recipe make a lot of frosting!
